Hello, and happy Monday! It's recipe challenge time again, and this week, The Recipe Challenge Blog Design Team is sharing some of our favorite Irish recipes, in honor of St. Patrick's Day. Now I have to admit that I didn't realize that lemon curd, one of my all time favorite condiments for my delicious scones was, or could be specifically Irish, but in researching it, I found that it is. Oh, how I do love my hot tea. Another favorite of mine, which goes along with tea is of course scones. Buttermilk scones slathered with the thick, tart, and oh, so yummy lemon curd! Ahhhhhh... it just doesn't get any better!! YUMMO!! If I'm completely honest, I'll let you know that I usually buy jars of imported lemon curd at Shady Gables (my favorite tea room), but when I purchased a cookbook from Shady Gables, I discovered this recipe for lemon curd. Now when I run out of my store bought treat, I can whip up a batch from scratch.
For this recipe card, I used yellow card stock to go along with the whole lemon color scheme, but I wanted to work in some green to tie it in with our St. Patrick's Day theme. This delicious DP comes from Basic Grey's Sugar Rush line, and can be found at The Scrapbook Store At Your Door. I used my Tart and Tangy stamp set from Stampin' Up! to stamp the lemons, and I punched some of them out with my circle punch to pop up for the border across the top. A few dew drop embellishments down the side, and that wound it up for this challenge.
